신선 연어 중 V. parahaemolyticus 생물막에 대한 차아염소산나트륨 및 부유전극 유전체 장벽 방전 (floating electrode-dielectric barrier discharge) 플라즈마의 제어 효과

초록
Abstract This study investigated the antibacterial effects of sodium hypochlorite (NaOCl, 50~200 ppm of Cl2) and floating-electrode barrier discharge (FE-DBD) plasma (1.1 kV, 43 kHz, 1.5 L/min N2) on V. parahaemolyticus biofilms on fresh salmon. In the case of NaOCl, when treated for 5 min at 50, 100, 150 and 200 ppm, it decreased by 0.48, 0.61, 0.83 and 1.09 log10 CFU/cm2, respectively. In addition, when treated with FE-DBD plasma for 5, 10, 30 and 60 min, it decreased by 0.41, 0.66, 0.82 and 1.06 log10 CFU/cm2. V. parahaemolyticus biofilms were significantly reduced (P < 0.05) with increasing treatment concentration and time. According to these results, NaOCl and FE-DBD plasma treatment for raw salmon can be used as an antimicrobial biofilm agent by inhibiting V. parahaemolyticus biofilm formation, which is a problem in seafood, and can be applied in the seafood industry to increase food safety.
