- Abstract
- Abstract This study investigated the antifungal effects of floating electrode barrier discharge (FE-DBD) plasma (1.1 kV, 43 kHz, 1.5 L/min N2 for 1~90 min) on Penicillium citrinum in Katsuobushi. There was no significant difference (P>0.05) of reduction between the control and FE-DBD plasma 1, 3, and 5 min treated samples, but there was a significant difference (P<0.05) of reduction between the control and FE-DBD plasma 7 min treated samples. In particular, a 0.81 log reduction was found in the 90 min treated samples. Hunter colors ‘L’, ‘a’, and ‘b’ values showed slightly decreased as the treatment time was longer and the pH in the plasma treated samples was not significantly different (P>0.05) from the control. FE-DBD plasma does not deteriously change the quality of the food, so it can be applied to dried seafood products such as Katsuobushi, which are difficult to sterilize after manufacture, and can be applied as another antifungal alternative physical method.
