| dc.description.abstract | 송아지고기는 어린 소 즉, 송아지에서 생산되는 고기이며 국제적 기준으로 1년 미만의 소에서 생산된고기를 통칭한다. 송아지고기는 사육방법 및 도축연령에 따라 밥빌, 대용유사양 송아지고기, 곡류사양송아지고기 및 방목사양 송아지고기로 구분한다. 생산 및 소비량이 가장 높은 송아지 고기는 대용유사양 송아지고기로 체중 200 kg 내외, 5개월령에 도축하며 육색은 핑크색을 나타낸다. 송아지고기는 일반적인 소고기에 비해 단백질 함량이 높고 지방함량이 낮으며 불포화 지방이 다수 포함되어 있고 고기의 육질이 부드럽다. 송아지고기의 육질에 양향을 미치는 요인으로 체중, 연령, 사료조성, 사료내 철분함량 등이 있다. 송아지고기를 생산하기 위해서는 송아지고기 생산용 대용유사료가 필요하다. 일반적으로 대용유사료내 단백질 및 지방함량이 20% 내외로 체중의 10% 이상 급여하며 조사료를 자유채식하여스트레스를 완화하고 반추위발달을 유지하도록 한다. | - |
