This study aimed to determine an effective treatment method for maintaining the fruit quality of ‘Irwin’ mango during the distribution process. Four treatments were applied: control, hot-water treatment (HWT), modified atmosphere packaging (MAP), and MAP + ethylene absorber (EA). We examined changes in atmospheric composition, fruit quality, and lesion rates during storage. The MAP treatment stored at room temperature resulted in higher relative humidity than the control and HWT. The internal atmosphere consisted of reduced oxygen levels and elevated carbon dioxide concentrations relative to the general atmosphere. The inclusion of the EA in the MAP treatment effectively suppressed ethylene production. A noticeable difference in fruit quality was observed in the weight loss rate. Specifically, the weight loss rate in the MAP-treated experimental group was less than 1%, indicating minimal weight loss. This was attributed to the high relative humidity within the MAP. Almost no statistically significant differences were observed in other indicators, except for the weight loss rate, likely due to using fully ripened mangoes. The lesion rate was lowest in the HWT group. The MAP treatment of room-temperature storage following low-temperature storage generated high relative humidity within the MAP, thereby resulting in a low-oxygen and high-carbon-dioxide atmosphere similar to that of the MAP treatment of room-temperature storage. The internal ethylene concentration increased rapidly upon transfer from a low- to room-temperature environment; however, the MAP + EA treatment showed a relatively low ethylene concentration. The most notable aspect of fruit quality was the weight loss rate. Upon transfer from a low- to room-temperature environment, the weight loss rate increased sharply in the control and HWT, while the MAP treatment experimental group exhibited a weight loss rate of less than 1%. The lesion rate also increased sharply upon transfer from a low-temperature environment to a room-temperature environment. The HWT exhibited the lowest lesion rate of less than 2%. Among the MAP treatment experimental groups, the inclusion of EA resulted in relatively fewer lesions. Overall, the MAP treatment effectively suppressed the weight loss rate, and the inclusion of EA within MAP reduced the ethylene concentration. The HWT effectively suppressed the lesion rate but was accompanied by a high weight loss rate. Therefore, combining two postharvest management techniques, namely HWT and MAP, is the most effective approach for maintaining the quality of ripened mangoes.
